A calm stroll, wandering about by Totana city, is the best form to appreciate its historical and environmental flavor, of very popular character. It is possible to emphasize the constant presence of good examples of the decorativas arts in the constructions of the set: traditional wood doors rejería, callers of forge.
Sometimes nevertheless the religious popular flavor of the "totaneros", their convictions and beliefs us show them in their streets and in recoletos corners where, from very old time, the neighbors constructed hornacinas in the outer walls of their houses. Some have desapareado with time, others changed their location, but still they conserve a good number of them that they are possible to be visited.
Totana has a population of near 25,000 inhabitants, distributed between the urban helmet and eight delegations: Paretón, Raiguero, Lébor, Ñorica, Mortí, Orchard, Vines of Lébor and Sierra.
The kitchen "totanera" is characterized by the simplicity of its plates, in them are combined the tradition with the new menus. To present/display the showcase of a traditional kitchen of the zone, is to speak of a domestic kitchen that intimately are related to the seasonal and festive cycles, as well as with basic the Earth raw materials, as they are the products of the orchard, the famous “totanera pumpkin”, eggplants, artichokes, marrows, green peppers of ball; as well as its vegetables, mainly the rice, without forgetting the meat - fundamentally the rabbit - and the flour for the elaboration gachas.
